The annual "making of the cake balls" took place this last weekend. With working now, I needed a little something for my co-workers and this was the perfect gift. My husband also decided to give those in his office a box, so add that to our regular list of friends and my mom's list...and that had us making 640 cake balls.

I went with "Happy Holidays" on my tags this year and not because I wanted to be politically correct. We have a variety of friends with different beliefs, and while I celebrate Christ's birth, they don't. It was just easier to have one tag rather than make a bunch of different ones. We've already had a comment about them not saying "Merry Christmas", and seriously, I just want to say, "Get over it." Until a few years ago with all of the hullabaloo over saying "Merry Christmas" and not "Happy Holidays", I honestly thought "Happy Holidays" included Thanksgiving, Christmas and New Year's. You know, the holidays. I just think we all get bent out of shape on a lot of unnecessary things nowadays. Okay, stepping off the soapbox now...We made about 12 batches this year. My husband was great and made most of the cakes the night before. Then, I flavored my cream cheese frosting and mixed them up and put them in some plastic containers, in the fridge, over night. That way, they were chilled for the next day and ready to go.

I've started using a tiny ice cream/cookie scoop and that helps speed things up. You still need to roll them in your hands when they come out of the scoop, but the scoop helps keep them uniform in size.
